VIETNAMESE GROUND CHICKEN LETTUCE WRAPS

Ingredients

  • 1 lb ground chicken
  • 1 ½ T peanut oil
  • 1 medium onion, finely chopped
  • 1 clove ginger, minced
  • 1 clove garlic, minced
  • 1 medium carrot, chopped or grated
  • 4 medium scallions, thinly sliced
  • + 15 more ingredients
    • 1 c water chestnuts, finely chopped
    • 5 medium mushrooms, finely chopped
    • 2 T fish sauce
    • 1 T soy sauce
    • 1 t sesame oil
    • ½ t cayenne pepper
    • ½ c cooked vermicielli or bean thread noodles
    • ¼ c dry-roasted peanuts, chopped
    • ¼ c cilantro, chopped
    • 16 leaf iceberg lettuce leaves
    • 5 T soy sauce
    • 3 T Thai or Vietnamese hot sauce, or any hot sauce
    • 5 T balsamic vinegar
    • 1 T lime juice
    • 2 t sugar
