Warm Lentil and Ham Salad

Ingredients

  • 3 light-green celery ribs
  • Salt and freshly ground pepper
  • 2 tablespoons unsalted butter
  • 2 carrots
  • clove(s) 1 garlic
  • 2 tablespoons sherry vinegar
  • 1 tablespoon Dijon mustard

    • ¾ pound thickly sliced smoked ham
    • ¼ cup snipped chives
    • 2 tablespoons minced flat-leaf parsley
    • 2 tablespoons extra-virgin olive oil
    • 2 tablespoons grapeseed or vegetable oil
    • 1 cup brown lentils
    • 2 cups chicken stock or low-sodium broth
    • 1 medium onion
    • 3 cups water

In a large saucepan, melt the butter. Add the onion, celery and carrots and cook over moderately high heat, stirring, until softened, about 5 minutes.
