White Bean and Pepper Soup

Ingredients

• 2 (15-ounce) cans Great Northern beans, undrained
• 4 cups canned no-salt-added chicken broth, undiluted
• ½ teaspoon dried dillweed
• ½ teaspoon black pepper
• ½ cup peeled, chopped cucumber
• ½ cup chopped green onions
• 1 cup chopped onion
• + 3 more ingredients
• • 1 cup chopped sweet red pepper
  • Vegetable cooking spray
  • 3 cloves garlic, minced

Coat a large Dutch oven with cooking spray; place over medium-high heat until hot. Add 1 cup chopped onion, sweet red pepper, black pepper, dillweed, and garlic; saute until vegetables are tender.
