White Bean and Radicchio Salad

Ingredients

  • 2 ½ cups shredded radicchio (about 2 small heads)
  • 3 tablespoons red wine vinegar
  • 2 tablespoons finely chopped ripe olives
  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • 3 tablespoons canned no-salt-added chicken broth, undiluted
  • 1/3 cup finely chopped shallots
  • 3 ounces feta cheese, crumbled
  • + 4 more ingredients
    • ½ teaspoon freshly ground pepper
    • ¼ cup chopped fresh oregano
    • 1 tablespoon olive oil
    • 4 large yellow or red tomatoes, cut into 1/2-inch-thick slices

Combine first 10 ingredients in a large bowl; toss well. Cover and chill at least 2 hours, stirring occasionally. To serve, arrange tomato slices evenly on 4 plates; top evenly with bean mixture.
