White Bean Soup with Tomato Salsa

  • ¼ cup fresh basil leaves, torn
  • Juice of 2 lemons
  • 1 cup orzo
  • 3 tablespoons olive oil
  • ¼ cup crumbled Feta cheese
  • 2 15-ounce cans white beans, rinsed
  • 4 tomatoes, roughly chopped
  • + 8 more ingredients
    • Kosher salt
    • ¼ teaspoon dried red chili flakes
    • 4 cups chicken broth
    • 1 red pepper, roughly chopped
    • 2 small red onions, diced
    • Freshly ground black pepper
    • 1 tablespoon sherry vinegar
    • 1 clove garlic, crushed

Cook the orzo according to the package directions; set aside.
