Wild Rice-and-Chicken Bowl
Ingredients
- ¼ cup chopped red onion
- Garnishes: apple slices, fresh flat-leaf parsley sprigs
- ½ cup golden raisins
- 1 teaspoon white wine vinegar
- ½ cup chopped red bell pepper
- 2 tablespoons sliced almonds, toasted
- 1 tablespoon extra virgin olive oil

- 2 cups uncooked wild rice
- 1 tablespoon Dijon mustard
- 2 tablespoons chopped fresh parsley
- 1 tablespoon honey
- 2 tablespoons fresh lemon juice
- 2 cups cooked, shredded chicken breasts
- 1 tablespoon chopped fresh mint
- ¼ teaspoon salt
Cook wild rice according to package directions. Combine cooked rice, chicken, and next 3 ingredients in a large bowl. Whisk together lemon juice and next 5 ingredients.
