Wild Rice and Leek Soup

Ingredients

  • 2 teaspoons minced fresh thyme
  • ¼ cup whipping cream
  • 1/8 teaspoon freshly ground black pepper
  • 4 ½ cups water, divided
  • 4 cups fat-free, less-sodium chicken broth
  • ½ teaspoon salt, divided
  • 4 cups thinly sliced leek (about 3 large)
  • + 4 more ingredients
    • Cooking spray
    • ½ cup uncooked wild rice
    • 1 cup chopped peeled red potato
    • 2 bay leaves

Bring 3 1/2 cups water, 1/4 teaspoon salt, and bay leaves to a boil in a large saucepan. Stir in rice. Reduce heat, and simmer 50 minutes or until rice is tender.
