Wild Rice and Porcini Mushroom Dressing

Ingredients

  • 3 tablespoons dry sherry (optional)
  • 3 onions (1 1/2 lb. total), peeled and finely chopped
  • Salt
  • ¼ teaspoon fresh-grated or ground nutmeg
  • ¾ cup (3/4 oz.) dried porcini mushrooms
  • 6 cups fat-skimmed chicken broth
  • 1 teaspoon dried thyme
  • + 1 more ingredients
    • 3 cups wild rice, rinsed and drained

1. In a bowl, pour 2 cups boiling water over porcini mushrooms. Let stand until water is cool enough to touch, about 20 minutes. Squeeze mushrooms gently to release grit, then lift from water.
