Wild Rice, Chicken and Asparagus Salad


  • ¼ cup(s) white wine, broth or water
  • 1 cup(s) milk or chicken stock
  • 1 teaspoon(s) corn starch
  • 2 tablespoon(s) lemon juice
  • salt and pepper
  • 1 cup(s) cooked wild rice, or ½ cup raw
  • 12 ounce(s) boneless, skinless chicken breast
  • + 2 more ingredients
    • 8 ounce(s) fresh asparagus
    • 1 tablespoon(s) olive oil

Rinse and drain wild rice. Add rice to 2 cups water and 1/2 teaspoon salt. Bring to boil, reduce heat, and simmer until rice is tender, about 45 minutes. Drain.
