Artichoke Chicken with Shitake Mushrooms

Ingredients

  • ¼ lb shitakes mushrooms sliced
  • 1 cup green olives, pitted
  • 1 cup dry white wine
  • 2 tablespoons fresh thyme leaves, plus more for garnish
  • 8 large shallots, halved
  • 1 pound artichokes, frozen or canned
  • 6 large garlic cloves
  • + 4 more ingredients
    • 1 lemon, plus more grated zest for garnish
    • 3 tablespoons olive oil
    • Coarse salt and freshly ground pepper
    • 1 chicken (about 3 pounds), cut into serving pieces
