Chicken and Fingerling Potatoes in Gorgonzola Cream

Ingredients

  • 16 grape tomatoes halved
  • 1 tablespoon butter
  • 1 chopped spinach with liquid squeezed out
  • 2 eggs
  • 1 shallot finely chopped
  • ½ teaspoon ground black pepper
  • 1 teaspoon kosher salt

    • ½ cup crumbled gorgonzola cheese
    • ½ pint heavy cream
    • 1 cup seasoned bread crumbs
    • 5 tablespoon olive oil
    • 2 tablespoon balsamic vinegar
    • 1 garlic cut in half
    • 1 tablespoon fennel seed
    • 8 fingerling potatoes
    • 8 chicken tenders

Boil fingerling potatoes on medium heat for 10 minutes. Drain and cut in half vertically.
