Chicken in Tomato-Peanut Sauce

Ingredients

  • 6 boneless, skinless chicken thighs, trimmed of excess fat
  • ¼ c unseasoned dry breadcrumbs
  • 2 T vegetable oil
  • 1 c diced onion
  • ½ c diced red bell pepper
  • 1 (14-ounce) can diced tomatoes, undrained
  • 1/3 c peanut butter
  • + 7 more ingredients
    • 2 clove garlic, crushed
    • 2 T brown sugar
    • 2 T soy sauce
    • 1/8 t crushed red pepper, or to taste
    • ½ c canned lower sodium chicken broth
    • Chopped cilantro, optional
    • 3 T coarsely chopped dry roasted peanuts
