Ingredients

  • 2 tablespoons whipping cream
  • 1 ½ cups fat-free, less-sodium chicken broth
  • ½ teaspoon salt
  • ¼ cup brandy
  • Gravy:
  • 1 medium onion, quartered
  • 2 carrots, peeled and halved
  • + 8 more ingredients
    • 4 celery stalks, halved lengthwise and crosswise
    • 16 bay leaves
    • ¼ teaspoon freshly ground black pepper
    • 1 (3 3/4-pound) whole roasting chicken
    • Chicken:
    • ¼ teaspoon salt
    • 3 tablespoons water
    • 2 tablespoons all-purpose flour
