Chicken Sausages Roasted with Potatoes and Brussels Sprouts


  • 1 ½ pounds small red-skinned potatoes
  • 2 teaspoons grated lemon peel
  • 2 large red bell peppers
  • 1 pound fresh brussels sprouts or frozen
  • 4 tablespoons olive oil
  • 2 teaspoons fresh thyme
  • 8 fully cooked smoked chicken or turkey sausages (such as chicken-apple)
