  • 20 g butter
  • 200 ml white wine
  • 100 g watercress
  • 4 little gem lettuces or 4 large handfuls baby salad leaves, trimmed and sliced into 1cm strips
  • small bunch lemon thyme
  • 1-2 tbsp olive oil
  • 3-4 garlic cloves
