  • ½ cup cooked brown rice (optional)
  • 1 medium tomato, diced
  • 1 4-ounce boneless, skinless chicken breast
  • 2 teaspoons olive oil
  • ¼ yellow onion, thinly sliced
  • ¼ cup fresh flat-leaf parsley, chopped
  • 4 ounces button mushrooms, quartered
  • + 3 more ingredients
    • 1 clove garlic, thinly sliced
    • ¼ teaspoon kosher salt
    • ¼ teaspoon black pepper

Heat oven to 400° F. Rinse the chicken and pat dry with paper towels. Season the chicken with 1/8 teaspoon of the salt and 1/8 teaspoon of the pepper.
