  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons chopped fresh sage
  • Salt and pepper
  • 10 pounds crown roast of pork (16 chops)
  • 1 large onion
  • 2 (14.5 oz.) cans low-sodium chicken broth

Preheat oven to 350°F. Place crown roast on a rack set in a large roasting pan. Rub roast all over, inside and out, with olive oil, and then sprinkle it with sage, thyme, salt and pepper.
