Ingredients

  • 2 tsp. minced fresh ginger
  • Freshly ground black pepper
  • 2 Tbs. soy sauce
  • ¼ cup hoisin sauce
  • 1 tsp. minced garlic
  • 3- to 4-lb. roasting chicken, cut into pieces (or 3-½ lb. chicken pieces), rinsed and dried
  • 1 Tbs. rice vinegar

Set a rack at the highest oven position. Heat the oven to 400°F. In a small, shallow bowl, whisk the hoisin sauce, vinegar, soy sauce, garlic, and ginger.
