Ingredients

  • 3 canned anchovies
  • 1 large carrot
  • 1 large onion
  • 2 small bay leaves
  • 2 cinnamon sticks
  • 2 celery stalks
  • 1 14-ounce can low-salt chicken broth

    • 2 fresh thyme sprigs
    • 1 750-ml bottle Merlot
    • 6 12- to 14-ounce lamb shanks
    • 3 tablespoons olive oil
    • 5 juniper berries
    • ¼ teaspoon ground nutmeg
    • 1 14-ounce can low-salt beef broth
    • 1 tablespoon tomato paste
    • 6 large garlic cloves

Preheat oven to 325°F. Heat oil in large ovenproof pot (wide enough to hold lamb in single layer) over medium-high heat. Sprinkle lamb on all sides with salt and pepper.
