Herb-Roasted Chicken with Lemon and Sage
Ingredients
- 1 onion
- 3 celery stalks
- 3 medium carrots
- 2 teaspoons freshly ground black pepper
- 1 bunch fresh sage leaves
- 1 lemon
- ½ cup extra-virgin olive oil

- 1 (3- to 3 1/2-pound) whole chicken
- 2 teaspoons kosher salt
Put the chicken in a large bowl. Add the oil, lemon, and sage; toss well. Cover tightly and transfer to the refrigerator to marinate for 24 hours.
