Herb-Roasted Chicken with Lemon and Sage

Ingredients

  • 1 onion
  • 3 celery stalks
  • 3 medium carrots
  • 2 teaspoons freshly ground black pepper
  • 1 bunch fresh sage leaves
  • 1 lemon
  • ½ cup extra-virgin olive oil
  • + 2 more ingredients
    • 1 (3- to 3 1/2-pound) whole chicken
    • 2 teaspoons kosher salt
