Herbed Roast Chicken


  • 1 sprig of fresh rosemary
  • 4 bay leaves
  • 1 lemon, halved
  • ¼ cup olive oil
  • 3 small handfuls of fresh herbs (basil, parsley, thyme, marjoram or oregano), finely chopped
  • Freshly ground black pepper
  • Kosher salt
