Hoisin-Glazed Five Spice Chicken Lettuce Wraps with Sweet-Heat Shiitakes

Ingredients

  • 16 iceberg or Bibb lettuce leaves, uniformly shaped
  • ¼ c peeled and shredded carrot
  • ¼ c chopped green onion, including white and green portions
  • 1 t sea salt
  • 1 ½ t Chinese Five Spice
  • 2 T plum sauce
  • 1 T minced fresh garlic
  • + 16 more ingredients
    • 1 lb ground chicken
    • 2 T roasted peanut oil
    • 5 Spice Chicken:
    • 1 ½ t Sriracha hot chili sauce
    • 2 T Sherry
    • 2 T plum sauce (I prefer "Koon Chung Sauce Factory" brand)
    • ¼ c minced shallots
    • 3 c sliced fresh shiitake mushrooms
    • 2 T roasted peanut oil
    • Sweet Heat Shiitakes:
    • ½ t sesame oil
    • 2 t grated fresh ginger
    • 2 t sherry vinegar
    • 2 T fresh orange juice
    • 1/3 c Hoisin sauce (I prefer "House of Tsang" brand)
    • Hoisin Glaze:

To make the Hoisin Glaze, whisk Hoisin sauce, orange juice, vinegar, ginger and sesame oil together in a small bowl. Set aside.
