Ingredients

  • 1 teaspoon kosher salt
  • Juice of ½ lime
  • 1 teaspoon ground nutmeg
  • 1 ½ teaspoons ground allspice
  • 1 ½ tablespoons garlic powder
  • 2 tablespoons paprika
  • 2 bunches scallions, trimmed
  • + 8 more ingredients
    • 1 8.5-ounce box corn muffin mix
    • 1 4-pound chicken, cut into pieces
    • 1 jalapeno, seeded and minced
    • 2 tablespoons molasses
    • ¼ teaspoon freshly ground black pepper
    • ¾ teaspoon cayenne pepper
    • Lime wedges (optional)
    • 1 ½ tablespoons olive oil

Heat oven to 400° F. Thinly slice the dark green tips of 4 scallions; set aside. Place the remaining scallions in a roasting pan.
