Peanut Dressing

Ingredients

  • ½ teaspoon salt
  • 2 cups dry roasted peanuts, finely ground
  • ¼ teaspoon pepper
  • 2 tablespoons butter or margarine, melted
  • ½ cup chicken broth
  • 1 ½ cups toasted soft breadcrumbs
  • 1 egg yolk

Combine peanuts, breadcrumbs, butter, salt, and pepper, stirring lightly; add egg yolk and broth, mixing well. Spoon dressing into a greased 1-quart casserole. Bake at 350° for 30 minutes or until lightly browned.
