Ingredients

  • 1 ¾ teaspoons black pepper
  • 2 ¼ teaspoons salt
  • 2 zucchini (1 lb total)
  • ½ cup reduced-sodium chicken broth
  • lemon wedges
  • 1 large roasting pan (17 by 12 inches)
  • 1 pound boiling potatoes
  • + 4 more ingredients
    • 1 medium onion
    • 2 tablespoons olive oil
    • 1 tablespoon fresh lemon juice
    • 1 3- to 3 1/2-lb chicken, quartered and wing tips discarded
