Roast Chicken with Balsamic Peaches

  • 6 sprigs fresh thyme
  • 3 tablespoons olive oil
  • 2 teaspoons kosher salt
  • ½ teaspoon black pepper
  • 4 peaches, quartered (peeled, if desired)
  • 4 small shallots, halved
  • 1 tablespoon balsamic vinegar
  • + 1 more ingredients
    • 1 3 1/2- to 4-pound chicken

Heat oven to 400° F. Rinse the chicken inside and out and pat it dry with paper towels.
