Roast Chicken with Herb Butter Onions and Garlic

Ingredients

  • 1 ½ teaspoons all purpose flour
  • ½ cup dry white wine
  • 1 cup canned low-salt chicken broth
  • 1 tablespoon fresh rosemary
  • 3 medium onions
  • 1 7- to 7 1/4-pound roasting chicken, rinsed, patted dry
  • ½ teaspoon coarse salt
  • + 8 more ingredients
    • ¼ teaspoon fennel seeds
    • 3 fresh small rosemary sprigs
    • 3 fresh large thyme sprigs
    • 1 tablespoon fresh thyme
    • 3 fresh large parsley sprigs
    • 1 tablespoon fresh parsley
    • 7 tablespoons unsalted butter
    • 14 garlic cloves

Mix butter, chopped herbs, fennel seeds and 1/2 teaspoon coarse salt in bowl; blend well. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before continuing.)
