Roast Chicken with Herb Butter Onions and Garlic
Ingredients
- 1 ½ teaspoons all purpose flour
- ½ cup dry white wine
- 1 cup canned low-salt chicken broth
- 1 tablespoon fresh rosemary
- 3 medium onions
- 1 7- to 7 1/4-pound roasting chicken, rinsed, patted dry
- ½ teaspoon coarse salt

- 3 fresh small rosemary sprigs
- 3 fresh large thyme sprigs
- 1 tablespoon fresh thyme
- 3 fresh large parsley sprigs
- 1 tablespoon fresh parsley
- 7 tablespoons unsalted butter
- 14 garlic cloves
Mix butter, chopped herbs, fennel seeds and 1/2 teaspoon coarse salt in bowl; blend well. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before continuing.)
