Roast Chicken with Maple Pepper Glaze and Sweet Potatoes
Ingredients
- 1 ¼ teaspoons fresh-ground black pepper
- 6 tablespoons pure maple syrup
- 1 ½ tablespoons bourbon
- 1 teaspoon salt
- 2 tablespoons cooking oil
- 2 pounds sweet potatoes (about 3), peeled and cut into 1 1/2-inch pieces
- 1 chicken (3 to 3 1/2 pounds)

1. Heat the oven to 425°. In a large roasting pan, toss the sweet potatoes with 1 tablespoon of the oil, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper.
