Ingredients

  • ½ teaspoon black pepper
  • 12 garlic cloves
  • 3 fresh thyme
  • 13 tablespoons olive oil
  • 1 3-lb chicken, quartered
  • 1 tablespoon unsalted butter
  • 2 teaspoons salt

Put oven rack in upper third of oven and preheat oven to 500°F.
