Roasted Chicken with Za'atar Stuffing
Ingredients
- fine sea salt and freshly ground black pepper
- ¼ cup plus 2 Tbs. olive oil
- 1 tsp. lemon zest
- 2 Tbs. chopped fresh Italian parsley
- 1 4-lb. chicken
- 2 tsp. za'atar
- 1 Tbs. minced garlic plus 1 head of garlic, cloves separated

Preheat the oven to 450°F. Rinse the chicken and pat dry.
