Roasted Chicken, Zucchini, and Ricotta Sandwiches on Focaccia

Ingredients

• 2 medium zucchini
• 2 teaspoons salt
• 4 purchased roasted chicken breasts, skinned, boned, thinly sliced crosswise
• 1 tablespoon olive oil
• 1 15-ounce container whole-milk ricotta cheese
• 1 teaspoon grated lemon peel
• 2 large tomatoes

• • 4 5x4-inch pieces focaccia or ciabatta
  • ¼ cup freshly grated Parmesan cheese
