Ingredients

  • ½ cup dry white wine
  • 1 cup veal stock or chicken broth
  • 1 ½ ounces sliced pancetta
  • 2 tablespoons olive oil
  • 2 veal chops
  • 1 garlic clove
  • 2 teaspoons unsalted butter
  • + 2 more ingredients
    • 1 tablespoon fresh parsley
    • 1 teaspoon fresh thyme

Preheat oven to 400°F. Cook pancetta in 1 tablespoon oil over moderately low heat in a large heavy skillet, stirring occasionally, until browned and fat is rendered.
