Roasted Garbanzo Beans and Garlic with Swiss Chard

Ingredients

  • 3 small bay leaves, preferably fresh
  • 2 shallots
  • 2 bunches Swiss chard
  • 1 teaspoon fennel seeds
  • 2 cups low-salt chicken broth
  • 2 15.5-ounce cans garbanzo beans (chickpeas)
  • 10 garlic cloves
  • + 5 more ingredients
    • 2 large shallots

    • 6 garlic cloves
    • 2 tablespoons extra-virgin olive oil
    • 1 ¼ cups extra-virgin olive oil

Preheat oven to 350°F. Combine first 5 ingredients in 8x8x2-inch glass baking dish. Sprinkle with salt and pepper. Pour oil over; cover dish with foil. Roast until garlic is tender, about 45 minutes.
