Roasted Herb Chicken with Morels and Watercress Salad

Ingredients

  • 1 tablespoon sherry vinegar
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons unsalted butter
  • 2 heads of garlic, separated into unpeeled cloves
  • 1 cup dry white wine
  • ½ cup chopped mixed herbs, such as thyme rosemary oregano and parsley
  • 1 cup boiling water
  • + 4 more ingredients
    • ½ pound watercress, thick stems discarded
    • 4 1/2-pound chicken
    • Salt and freshly ground pepper
    • 1 ½ ounces dried morel mushrooms, see Note

Preheat the oven to 450°. Rub the chicken all over with 2 tablespoons of the olive oil. Season the chicken inside and out with salt and pepper and set it in a roasting pan, breast side up.
