Roasted New Potatoes with a Middle Eastern Twist

  • aluminum foil
  • Shallow roasting pan or large cookie sheet

  • kosher/coarse salt
  • 1 tablespoon fresh parsley, finely chopped

    • 1 medium yellow onion, cut into wedges
    • ¼ cup extra virgin olive oil
    • 2 lbs new potatoes, washed and cut into quarters or wedges
