Roasted Organic Chicken with Herbs


  • 1 onion, quartered (optional)
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon coarse sea salt
  • 1 tablespoon dried mixed herbs such as thyme, rosemary and oregano
  • 1 tablespoon extra-virgin olive oil
  • 1 (3.5-pound) whole organic chicken

Preheat oven to 425°F. Remove inside packet of innards from chicken, if included, and discard or reserve for another use. Pat chicken dry.
