  • 1 tablespoon salt
  • 1 4 3/4- to 5-pound whole free-range organic chicken
  • 1 teaspoon ground black pepper
  • 1 garlic clove
  • 2 tablespoons Hungarian sweet paprika
  • 2 teaspoons grated lemon peel
  • 2 small lemons

    • 3 tablespoons olive oil
    • 1 tablespoon fresh mint
    • 3 tablespoons fresh lemon juice
    • 1 tablespoon ras-el-hanout
    • 6 garlic cloves
