Sesame Soba Noodles with Roast Chicken and Chard

  • 2 Tbs. finely chopped fresh ginger
  • Lime wedges for garnish
  • 8 oz. soba noodles
  • 2 Tbs. extra-virgin olive oil
  • 1-½ Tbs. soy sauce
  • 2 cups shredded rotisserie chicken
  • 3 Tbs. finely chopped salted peanuts or cashews (optional)
  • + 4 more ingredients
    • 3 scallions, very thinly sliced, white and green parts kept separate
    • ¼ tsp. crushed red pepper flakes
    • 1 medium bunch Swiss or rainbow chard (10 oz.), trimmed and cut crosswise into 1-inch ribbons
    • 2-½ Tbs. Asian sesame oil

Bring a large saucepan of water to a boil. Meanwhile, in a large bowl, whisk the sesame oil, soy sauce, and pepper flakes to combine. Heat the olive oil in a 12-inch skillet over medium-high heat. Add the scallion whites and cook, stirring frequently, until soft but not browned, about 2 minutes...
