Sichuan Chicken Lettuce Wraps with Spicy Sesame Drizzle

Ingredients

  • 1/3 c chopped honey roasted peanuts
  • 16 iceberg lettuce leaves, uniformly sized for wrapping
  • ½ c diced, peeled fresh carrot
  • ½ c sliced fresh green onion
  • 1 t chili oil
  • 2 T sherry
  • 2 T soy sauce
  • + 16 more ingredients
    • 1 T grated fresh ginger
    • 1 T minced fresh garlic
    • 1 lb ground chicken
    • ¼ lb sliced shiitake mushroom caps
    • 2 T + 2 teaspoons roasted peanut oil, divided
    • Sichuan Chicken:
    • 1 t fresh orange zest
    • ¼ c sliced green onion
    • 2 t sesame oil
    • 2 t Sriracha sauce
    • 2 T mirin
    • 3 T seasoned rice vinegar
    • ¼ c ponzu soy sauce
    • 1 T minced fresh garlic
    • 1 t roasted peanut oil
    • Spicy Sesame Drizzle:

To make the Spicy Sesame Drizzle, heat oil in nonstick over medium heat and saute garlic for 30 seconds. Remove from heat and add garlic to a small bowl.
