Smoked Chicken with Roasted-Red Pepper Sauce

  • 1 drained canned chipotle chile in adobo sauce, diced
  • 1 cup salsa
  • 1 (7-ounce) bottle roasted red bell peppers, drained and sliced
  • 4 (4-ounce) skinned, boned chicken breast halves
  • ½ teaspoon ground coriander
  • Chopped fresh cilantro (optional)
  • 2 bacon slices
  • + 4 more ingredients
    • ½ cup chopped red onion
    • 3 garlic cloves, minced
    • ¼ teaspoon black pepper
    • ¼ teaspoon salt

Cook bacon in a large nonstick skillet over medium-high heat until crisp. Remove bacon from skillet; crumble and set aside. Sprinkle chicken with salt and black pepper.
