Smoked Lemon-Chipotle Chickens

Ingredients

  • 2 ½ cups hickory or oak wood chips
  • Kitchen string
  • 3 (4 ½-lb.) whole chickens
  • 2 teaspoons salt, divided
  • 2 tablespoons adobo sauce from can
  • 3 canned chipotle peppers in adobo sauce
  • 3 chicken bouillon cubes
  • + 5 more ingredients
    • 3 tablespoons white vinegar
    • ¼ cup olive oil
    • ¾ cup fresh lemon juice
    • 8 large garlic cloves, peeled
    • 1 small sweet onion, quartered
