Sweet & Sour Chicken Drumsticks

Ingredients

  • 3 cup cooked black beans
  • 3 cup cooked white or brown basmati rice
  • 2 teaspoon coarse sea salt
  • ½ cup fresh mint leaves, cut chiffonade (stacked, rolled and very thinly sliced)
  • ½ cup fresh lime juice
  • 2/3 cup coconut milk
  • 1 ½ cup diced red bell pepper (1/4 inch dice)

    • 6 cup diced fresh pineapple (1/2 inch dice)
    • Pineapple Mint Salsa:
    • 12 bone in chicken thighs, with skin, pierced several times with a small knife
    • 1 teaspoon coarse ground black pepper
    • 2 tablespoon Sriracha sauce
    • 2 tablespoon minced fresh garlic
    • 2 tablespoon grated fresh ginger
    • 2 tablespoon grated fresh orange zest
    • 3 tablespoon seasoned rice vinegar
    • 3 tablespoon soy sauce (can substitute reduced sodium)
    • 1 cup fresh orange juice
    • 1/3 cup lemon olive oil

Preheat oven to 400F. In a large glass dish, whisk together oil, juice, soy sauce, vinegar, zest, ginger, garlic, Sriracha, and pepper.
