The BEST Chicken Stock


  • Salt to taste
  • 1 to 2 Tablespoons worcestershire sauce
  • 1 tablespoon "21 Salute Seasoning" - found at Trader Joe's plus 10 or so peppercorns (or any combination dried spices such as parsley, thyme, rosemary, bay leaf). Tie the herbs up in some cheesecloth to keep the broth clear
  • 1 head garlic, cut in half horizontally
  • 3 large carrots, cut into chunks (don't bother peeling them)
  • 3 ribs celery, cut into thirds
  • 1 large yellow onion, quartered
  • + 1 more ingredients
    • One whole chicken, cut into pieces (you can usually find a pre-cut chicken at your local market)

Place the chicken pieces on a roasting pan and season generously with salt and pepper. Roast the chicken at 350 for about an hour. Pour off the fat from the roasting pan and deglaze with about 1/4 cup water (you could also use a little wine). Pour the juices into a large soup pot. Once the ...
