Whole-Wheat Noodles with Black Olives, Farmer’s Cheese and Roasted Chicken


  • 4 qt water
  • 1 T coarse salt
  • 8 oz whole wheat pasta (linguine, spaghetti, angel hair, fettucine)
  • 2 T olive oil, divided
  • 2 c sliced cooked Peruvian Roasted Chicken
  • 2 T Ripe Olive and Fig Tapenade
  • ½ c reserved pasta cooking water or reduced-sodium chicken broth
  • + 3 more ingredients
    • ¼ c fresh basil leaves, chiffonade
    • 1 c Homemade Farmer's Cheese, cooled and crumbled
    • Freshly ground black pepper
