Because of their rich ring of covering fat, pork chops are well suited to grilling. Simple preparations like a brush of rosemary, garlic and wine are some of the best ways to enhance the lightly smoky flavor of grilled pork without covering the subtle flavor of the meat. Counterintuitively perhaps, grilled pork chops are best paired with rich white wine, like something barrel aged and a little smoky. There are many white wines with a naturally smoky, mineral flavor that are ideal for this pairing.

 
Top notch Soave is rich and fruity with a whiff of mineral smoke that comes from the volcanic soils of its region. It is a wonderful pairing with grilled pork chops as it matches the intensity and complexity of the meat almost perfectly. Pouilly-Fume from France and Pinot Bianco from the Alto-Adige in Italy are also particularly fine matches for grilled pork chops.
 
The grill is red wine’s friend, too. The smoke and char created during the grilling process help to temper the effects of oak in the wine and long for sweet, fruity flavors to serve as a contrast. With mildly flavored grilled pork, it’s important to look for wines that have a certain degree of power. Those that see some oak are all the better.
 
Pinot Noir from the New World can be a great match for grilled pork chops. The medium weight that is filled with sweet fruit and smoky, oak-induced accents seems tailor-made for grilled pork. Grenache is another medium-bodied wine filled with ripe red fruit flavors that can marry well with the flavors of grilled pork. Other more adventurous options that fit this sweetly fruited profile include Teroldego from Trentino in Italy, Cabernet Franc, particularly from the Loire Valley in France, and Gamay.
