Apple, Fennel, and Cheddar Cheese Straws

Ingredients

  • 1-½ oz. finely grated sharp Cheddar (¾ cup)
  • 1 large egg, lightly beaten
  • ¾ oz. (1-½ Tbs.) unsalted butter
  • Granulated sugar, as needed
  • 1-½ lb. crisp apples (such as Sierra Beauty, Pippin, or Braeburn), peeled, cored, and cut into ¼-inch pieces
  • Three ½-lb. sheets frozen puff pastry, thawed (from two 1.1-lb. packages)
  • 1-½ tsp. fennel seed, coarsely crushed
  • + 2 more ingredients
    • Fresh lemon juice, as needed
    • Kosher salt
