Ingredients

  • 2 ¾ cups (or more) bread flour
  • 1 ½ teaspoons active dry yeast
  • 2 pears
  • 2/3 cup walnut pieces
  • extra-virgin olive oil
  • 1 ½ teaspoons salt
  • 1 ¼ cups warm water (105°F to 115°F)
  • + 3 more ingredients
    • Pinch of sugar
    • 12 ounces Brinata or aged Manchego cheese
    • freshly ground black pepper

Pour 1 1/4 cups warm water into large bowl. Add sugar; sprinkle yeast evenly over and stir to blend. Let stand until yeast dissolves and mixture looks spongy, about 10 minutes.
