Grilled Salad Pizza
Ingredients
- Cooking spray
- ½ cup (2 ounces) shredded part-skim mozzarella cheese, divided
- ¼ cup (1 ounce) grated fresh Parmesan cheese, divided
- ¼ cup chopped fresh basil
- 3 ½ teaspoons olive oil, divided
- 2 ½ cups coarsely chopped trimmed arugula (about 4 ounces)
- 1 ½ cups chopped seeded tomato

- 1 ½ teaspoons Dijon mustard
- 1 (14-ounce) can artichoke hearts, drained and chopped
- 1 package dry yeast (about 2 1/4 teaspoons)
- 2/3 cup warm water (100° to 110°)
- 1 2/3 cups all-purpose flour
- 1 teaspoon sugar
- ½ teaspoon salt
- ½ teaspoon dried oregano
- ¼ teaspoon dried thyme
Dissolve yeast in warm water in a large bowl; let stand for 5 minutes. Stir in 1 1/2 teaspoons oil. Lightly spoon flour into dry measuring cups; level with a knife.
