Peach, Prosciutto, and Goat-Cheese Pizzas

Ingredients

  • 3 ounces soft mild goat cheese, crumbled
  • 1 pizza stone
  • 2 teaspoons fresh rosemary
  • 2 ½ cups all-purpose flour
  • 3 tablespoons extra-virgin olive oil
  • 8 very thin prosciutto slices
  • 1 1/4-oz package active dry yeast
  • + 5 more ingredients
    • 1 ½ firm-ripe peaches
    • 1 teaspoon salt
    • 1 teaspoon sugar
    • 1 cup water
    • baker's peel

Stir yeast and sugar into water until dissolved and let stand 5 minutes, or until foamy. Whisk together flour and salt in a bowl and add yeast mixture, stirring until a dough forms.
