Pizza with Arugula and Prosciutto

  • 6 slices prosciutto, torn into pieces
  • 2 tablespoons extra-virgin olive oil
  • 2 12- to 14-ounce frozen pizzas
  • ½ bunch arugula (about 2 cups)
  • 1 tablespoon fresh lemon juice
  • Kosher salt and pepper

Cook the pizzas according to the package directions. Meanwhile, in a large bowl, toss the arugula, prosciutto, olive oil, lemon juice, and 1/4 teaspoon each salt and pepper. Place on top of the cooked pizzas.
